WHITE CHOCOLATE MOUSSE WITH BERRIES

INGREDIENTS: 300g white chocolate, 3 egg yolks, 3 tbsp sugar, 2.5g cream, 1 packet of unflavored gelatin, 3 egg whites. 400g frozen red fruits, 1/2 cup orange juice, 2 tbsp sugar. Procedure: Process the chocolate and melt it in a double boiler with 4 tbsp of the cream. Beat the egg yolks with the sugar until white, add the whipped cream and the hot gelatin previously hydrated with cold water. Add the egg whites until stiff. Pour into glasses and refrigerate. Place the fruit in a small saucepan with the juice and sugar and cook for a few minutes, cool and pour over the Mousse. Decorate with mint leaves.
