Passover Chocolate Chip Cookie Sticks

The familiar taste and feel of chocolate chip cookies but on Passover.

Equipment
9x13 baking sheet lined with parchment paper or silicon mat
Ingredients
1 cup matzo cake meal
½ cup granulated sugar
½ cup brown sugar
¼ cup potato starch
½ teaspoon baking soda
½ teaspoon salt
⅔ cup oil avocado
1 egg beaten
1 teaspoon vanilla extract
½ cup semisweet chocolate chips
⅛ cup water or more as needed
Instructions
Preheat oven to 350ºF.
Mix the matzo cake meal, granulated sugar, brown sugar, potato starch, baking soda, salt, oil, vanilla extract, water, and beaten egg together in a mixing bowl. If batter seems dry add a tiny bit more water until it comes together.
Stir in the chocolate chips.
Divide the cookie dough into two and form each into a rectangle approximately 12 inches by 4 inches. Place onto the 9x13 baking sheet.
Bake for 20 minutes.
Remove from the oven and while the cookie is still hot, cut 10-13 individual chocolate chip cookie sticks.
Cool for 15 minutes before serving.
