Lamb in Wine with Mashed Potatoes

Ingredients :

  • 1 leg of lamb,

  • 1 head of garlic,

  • 2 carrots,

  • 2 leeks,

  • 2 onions,

  • 2 celery stalks,

  • fresh herbs to taste (rosemary, thyme, bay leaf, parsley),

  • peppercorns,

  • 1 glass of red wine,

  • water.



Preparation :

  • Cut and defat the lamb.

  • In a saucepan, place all the coarsely chopped vegetables, herbs, halved garlic, pepper, and lamb. Cover with the wine and water.

  • Cook covered and gently for 4 to 5 hours.

  • Remove the lamb and strain the cooking liquid to reheat it.

  • Serve with mashed potatoes
