GRILLED SALMON PACKAGES

INGREDIENTS

  • 4 wild salmon fillets (6 ounces), skinless

  • 1 lemon, thinly sliced

  • 1 zucchini, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1 package of cherry tomatoes, cut in half

  • 1 bunch of green onions, thinly sliced

  • 2 cups fresh or frozen broccoli florets

  • Several tablespoons of fresh herbs (flat-leaf parsley, basil, dill, thyme, tarragon)

  • Salt

  • Freshly ground black pepper

  • Olive oil



PREPARATION

Preheat grill to medium heat. Cut 4 sheets of aluminum foil (12 x 20 inches) and 4 sheets of parchment paper (12 x 20 inches). Place 1 sheet of parchment paper on top of each sheet of foil.

1. Place a salmon fillet in the center of each foil packet. Divide the lemon slices and vegetables between each packet and place them on top of the salmon.

2. Sprinkle fresh herbs, salt, and pepper on top. Drizzle with olive oil.

3. Fold and seal the salmon packets.

4. Grill for about 12 to 15 minutes.
