EGGPLANT LASAGNA

Ingredients

  • Homemade Tomato Sauce

  • Eggplant

  • Mozzarella cheese

  • Parmesan


Directions:

  1. The first thing you have to do is make a homemade tomato sauce, I always make it in advance so I don't have so much work on the same day.

  2. Then the eggplants are cut lengthwise, not too thin, not too thick, you put them in salted water for a half hour to remove all the bitterness.

  3. You put a little oil in a frying pan, there are people who like it fried, I try to make them with almost no oil, so that they brown on both sides.

  4. In a pyrex, place a little sauce, then the eggplants as if it were a Lasagna, top with sauce and slices of mozzarella cheese, so you keep on layering until you finish with eggplant, you add sauce and Parmesan cheese and put it in the oven until it is browned and gratin.

  5. You can also make it and store in the freezer and bake when you are going to use it.
