PARVE CHOCOLATE CAKE FOR PASSOVER

A very easy cake to make and the result is excellent.
Ingredients :
200g of semisweet pareve dark chocolate
3/4 cup oil
3/4 cup sugar
4 large eggs
1/2 cup matzo meal for cakes *(cake matzo meal)
1/2 cup potato starch
1 teaspoon kosher baking powder for Passover
Besides:
Powdered sugar to decorate the cake
Preparation:
We cut the chocolate into small pieces and place it in the microwave for a few seconds until the chocolate dissolves in the microwave (or in a double boiler). Once the chocolate is melted, remove from the microwave and mix well with the oil in a larger container. Then we add the sugar little by little, mixing as it is added. Once the sugar is integrated with the chocolate and the oil, we add the eggs one by one until they are integrated into the mixture. Now we gradually add the matzo meal for baking, the potato starch and the baking powder. Mix everything well by hand with the help of a spatula until you get a homogeneous mixture.
Preheat oven to 350 degrees F. Grease a baking pan and spread the batter evenly over the top. Bake for approximately 45 minutes, or until a toothpick inserted comes out clean.
Then remove from the oven, let it rest for about 12 to 15 minutes, unmold and let it rest on a rack, once at room temperature sprinkle powdered sugar on top if desired.

*Note: To make your own matzo cake at home, simply grind the matzo meal in a blender or food processor. Use about 1 cup and 2 tablespoons of matzo meal to get 1 cup of matzo meal cake.
