WHITE CHOCOLATE CHEESECAKE

Ingredients :

  • 1 cup of processed vanilla beans,

  • 30 gr of butter,

  • 1 ½ tbsp sugar,

  • 200 gr of white chocolate,

  • 2 tbsp cream,

  • 900 gr of cream cheese,

  • ½ cup sugar + 2 tbsp,

  • 4 eggs,

  • 2 egg yolks,

  • 1 tsp vanilla essence,

  • 2 tbsp flour,

  • 500 gr of strawberry,

  • 1/2 cup of sugar,

  • 1 cup of water,

  • 1 tsp lemon zest



Preparation :

  • Mix the vanilla with the melted butter and sugar.

  • Grease a springform pan and line it with the vanilla wafers.

  • Bake at medium temperature for 10 minutes. Cool.

  • Melt the chocolate with the cream in a double boiler.

  • Mix the cream cheese with the sugar and add the eggs, yolks, chocolate, vanilla, and sifted flour.

  • Bake at minimum temperature for approximately 1 hour and 15 minutes. Run a knife around the edges and let cool in the turned-off oven.

  • Place the strawberries, sugar, water, and zest in a small saucepan and cook until thickened for approximately 10 minutes. Cool and serve alongside the cheesecake.
