TOMATO AND OLIVE SALAD

Ingredients

  • 5 large tomatoes, chopped to taste

  • 1/2 cup sliced black olives

  • 1/4 cup herbs of your choice (or a mix of chopped herbs such as basil, cilantro, oregano, or chives)

  • 1/4 teaspoon of salt (remember that olives are salty and so is mustard, be careful with the salt)

  • 1/2 cup extra virgin olive oil

  • 2 tablespoons of lemon juice

  • 1 tablespoon Dijon mustard (or whatever you have on hand)

  • 1 teaspoon of honey

  • Basil leaves for decoration.



Preparation

  • In a medium salad bowl, place the tomatoes, olives, and herbs and sprinkle with salt.

  • In a small bowl, whisk all ingredients together: oil, mustard, lemon juice, and honey to combine thoroughly.

  • Season the salad with the above mixture, then serve. Enjoy your meal!
