SWEET POTATO GNOCCHI

INGREDIENTS

  • 2 cups sweet potato, cooked and mashed

  • 3½ cups quinoa flour

  • 1 teaspoon of salt

  • 1 egg

  • Extra Virgin Olive Oil

  • Garnish: fresh basil, parmesan cheese





PREPARATION

  1. In a large bowl, add the cooked sweet potato, quinoa flour, salt, and egg. Mix until evenly combined.

  2. Sprinkle the counter with quinoa flour. Remove a piece of dough and roll it into a rope.

  3. Cut the rope every ½ inch.

  4. Place a fork on the table. Take each piece of gnocchi and run it through the prongs of the fork to create a classic gnocchi design.

  5. Add the gnocchi to boiling salted water and cook for about 5 minutes, until the gnocchi float to the top and are cooked through.

  6. Strain, then add olive oil and garnish with fresh basil and Parmesan cheese.
