Sugar-Free Chocolate Banana Muffins

Ingredients

  • 3 very ripe bananas

  • ½ cup of Greek yogurt

  • 1 egg

  • 1 ½ teaspoons stevia or 2 packets

  • ¼ cup of crushed almonds, optional Also optional you can add ½ cup of peanut butter

  • 1 ½ cups almond flour

  • ½ teaspoon salt

  • 5 SkinnyMe chocolate squares, chopped

  • 1 tablespoon baking powder




Preparation

  • Preheat oven to 350.

  • Spray muffin tins with cooking spray.

  • In a food processor, blend the banana, sugar, egg, and yogurt.

  • In a separate bowl, mix all the dry ingredients. Add the wet mixture to the dry mixture. Stir in the chocolate and almonds.

  • Divide the mixture evenly into muffin tins.

  • Bake for 20 to 25 minutes or until golden brown. To check for doneness, insert a toothpick into the oven. If it comes out clean, they're ready.

Enjoy it for breakfast, a snack, or dessert.
