Ingredients : 70 gr. of butter, 3 heaped tbsp. of flour, 1 1/2 l of milk, 4 eggs, 6 artichokes or spinach, 3 tbsp. grated cheese, Salt and pepper,
Preparation : Prepare a white sauce with the butter, flour and milk. Let it cool, then add the 4 egg yolks, the remaining edible parts of the artichokes or the chopped spinach, and the grated cheese. Season with salt and pepper. Add the 4 whipped egg whites and fold in gently. Place in a greased Pyrex dish. Bake in a moderate oven for 30 minutes.
