SPINACH OR ARTICHOKE SOUFFLE

Ingredients :

  • 70 gr. of butter,

  • 3 heaped tbsp. of flour,

  • 1 1/2 l of milk,

  • 4 eggs,

  • 6 artichokes or spinach,

  • 3 tbsp. grated cheese,

  • Salt and pepper,



Preparation :

  • Prepare a white sauce with the butter, flour and milk.

  • Let it cool, then add the 4 egg yolks, the remaining edible parts of the artichokes or the chopped spinach, and the grated cheese. Season with salt and pepper. Add the 4 whipped egg whites and fold in gently.

  • Place in a greased Pyrex dish. Bake in a moderate oven for 30 minutes.
