SCRAMBLED ZUCCHINI

Ingredients :

  • 4 zucchini or round slippers

  • 1 chopped onion

  • 2 eggs

  • salt, pepper

  • 3 tbsp olive oil

  • garlic powder to taste



Preparation

  • Wash and cut the zucchini into 0.5 cm wide slices.

  • Coat the bottom of a pan with a drizzle of olive oil and heat for 2 minutes over high heat. Reduce the heat to medium and brown the chopped onion.

  • Then add the zucchini, season with salt and pepper and sprinkle with garlic powder, cover.

  • Stir occasionally. When the zucchini is translucent and soft, add the 2 beaten eggs and stir gently until cooked through.
