Salmon croquettes

Salmon croquettes are a quick, easy, and, frankly, economical meal. They have a long tradition dating back to our grandparents' time, when fresh fish wasn't as easy to obtain or affordable, but canned salmon was easy to keep in the pantry for quick and healthy last-minute meals. Of course, you can make them more sophisticated with fresh salmon, but if you try this recipe, you might find it as enjoyable as our ancestors did.
RECIPE:
Ingredients
1 425g can of salmon, drained
1 small onion, finely chopped
2 beaten eggs
2 teaspoons Dijon mustard
1/4 cup breadcrumbs
1/4 cup panko
Oil for frying
Instructions
In a large bowl, mash the salmon with the onion, eggs, Dijon mustard, and breadcrumbs.
Mix well and form small croquettes.
Place the panko on a plate and cover the croquettes.
Heat a thin layer of oil in a large skillet.
Cook the croquettes on both sides until golden brown.
Serve with tartar sauce or try a mixture of regular or pareve sour cream, dill, and lemon juice.
