Potato and Sweet Potato Kugel

Ingredients

• 2 eggs

• ¼ cup matzo meal

• 2 tsp salt

• Pepper to taste

• 1 kilo of peeled potatoes

• 1 kilo of peeled sweet potatoes

• 1 onion

Preparation

1. Preheat oven to 375°

2. Mix the eggs, matza flour, salt and pepper in a bowl.

3. Grate the potatoes, sweet potatoes and onion in a food processor, add to the egg mixture, mix well

4. Place in a greased pyrex and bake at 375° for approximately 40-50 minutes until golden brown.
