ONION SOUFFLE

Ingredients : White sauce ,

  • 1/2 Kg. of onions,

  • 6 tbsp. of oil,

  • Salt,

  • pepper and

  • sugar,

  • 3 eggs,

  • 50 g grated cheese,

  • Breadcrumbs


Preparation :

  • Prepare a very thick white sauce.

  • Peel the onions and finely chop them. Brown them in the oil. Season with salt and pepper and add a pinch of sugar. Add them to the white sauce.

  • Add three egg yolks and the grated cheese. Mix.

  • Add three egg whites to the snow.

  • Place in a greased Pyrex dish. Sprinkle with breadcrumbs.

  • Cook in a moderate oven for 30 minutes.
