MEDITERRANEAN QUINOA SALAD

INGREDIENTS 2 cups cooked quinoa (about 1 cup uncooked) 1 red bell pepper, chopped 1/2 cucumber, chopped 1 cup chickpeas 1/2 small red onion, finely chopped 1/2 cup black olives, halved 1/4 cup sun-dried tomatoes, finely chopped 1/3 cup fresh basil, finely chopped 1/4 cup crumbled cheese (Roquefort, feta) Lemon Oregano Dressing: ( this is for storing, you won’t use it all!) 2 tablespoons lemon juice 1 tablespoon white wine vinegar (or red wine vinegar) 1/3 cup olive oil 1 tablespoon Dijon mustard 1 teaspoon maple syrup or honey 1/2 teaspoon dried oregano 1/2 teaspoon garlic powder salt and pepper to taste Instructions To prepare the salad, mix all ingredients together in a large bowl. If there's a particular ingredient you like better, feel free to add more! Mix all the salad dressing ingredients in a small jar. Cover with the lid and shake until combined. Pour half of the dressing over the quinoa salad and taste. If you like more dressing, add more.
