LOW CALORIE CANNELLONI OR ENCHILADAS

Ingredients: (2 large or 3 small) 2 eggs 2 tbsp milk 3 salt and pepper 1 heaped tbsp finely ground wheat bran soy grated cheese Preparation: Beat two eggs with two tablespoons of milk, salt and pepper (to taste). Add one heaped tablespoon of finely ground wheat bran. Let stand for two minutes so that the bran hydrates and swells. If you like, you can add grated cheese to the mixture. Prepare the cannelloni normally. Note: these do not contain any flour, since bran is a carbohydrate in the form of fiber that is completely eliminated and is not assimilated. Ideal for diabetics. Another option is to add soy flour instead of bran. They are almost the same as regular bran, but have a much lower glycemic index. This option, when insulin is more stabilized, is intermediate between low-carb and regular.
