LEEKS FRITTATA

Ingredients

  • 1 large onion

  • Garlic

  • 2 or 3 leeks

  • pepper and salt

  • nutmeg

  • 1 tbsp cornstarch

  • 10 eggs

  • 2 tsp baking powder



Directions

  • Sauté a large finely chopped onion. Then add crushed garlic and continue frying.

  •  Add the leeks, well cleaned, checked for bugs and thinly slice.

  • Sauté everything and add salt. Pepper and nutmeg.

  • Mix well and continue cooking. Cover the pot and simmer, the leek is already soft.

  • Then uncover the pot and add a tablespoon of cornstarch and mix well. It has to stay dry.

  • For these molds that I use, I cracked 10 eggs, added salt and baking powder. Mix with the leeks and pour onto the pans already lined with baking paper.

  • Bake in a hot oven until done.
