Ingredients :

  • 500 g of 0000 flour

  • 50 g of yeast

  • 1 teaspoon of salt

  • 1 teaspoon of sugar

  • 1 cup of warm water

Stuffed

  • 500 gr of minced meat 2 times

  • 1 grated onion

  • 1 cup of tomato puree

  • 2 teaspoons of salt

  • 1 tablespoon of sugar

  • 1 squeezed lemon

  • 1 tablespoon of baharat

  • 1 teaspoon of cumin

  • 1 tablespoon of ketchup Preparation :

Mass:

  • Dissolve the yeast with the warm water and 1/2 teaspoon of sugar, let it foam.

  • Place the flour, salt, and sugar in a bowl. Mix well.

  • Pour the yeast into the bowl containing the flour, mix, and form the dough. If necessary, add more warm water, always a little at a time.

  • Let the dough rest covered, until it doubles in volume (the recipe says 2 hours)

Stuffed :

  • Place the minced meat in a bowl with the tomato puree, grated onion, ketchup, salt, sugar, and baharat.

  • Mix well until you get a homogeneous preparation.

  • Finally, add the lemon juice and let it rest for an hour in the refrigerator.

  • Take the dough, deflate it and make small balls, stretch them with the rolling pin, giving them a 5 cm diameter circle shape.

  • Place it on a baking sheet brushed with oil and place a spoonful of the meat mixture on each circle.

  • Bake in a hot oven until the dough and minced meat are cooked.
