LACHMASHEEN 3 (BAREDES)

Ingredients: 1 kg of all-purpose flour, 30 g of yeast, 1/2 liter of water, 20 g of salt, 1 kg of minced meat, 1 can of tomato puree, lemon juice, 1 onion, parsley, salt, 1 tsp of baharat, 1/2 tsp of cumin, 1 pinch of sugar. Procedure: Mix the flour with the water and salt. Knead vigorously for 10 to 15 minutes. Dissolve the yeast in water and a pinch of sugar. Add the yeast and continue kneading for another 7 minutes. Form a ball and cover. Let it rest for 30 minutes. When it has risen, degas it by kneading it again so that it reduces its initial volume. Cover and let it rise. Make balls and place them on an oiled baking sheet. Boil the tomato puree with salt, baharat, and cumin until thickened. Turn off the heat and add lemon juice, sugar, and the raw ground beef. Add the finely chopped onion and parsley. Roll out the dough and form into discs. Fill and flatten with a spoon. Bake in a very hot oven.
