Ingredients Procedure Wash the etrog and the orange, cut them in half lengthwise and slice them very thin, removing the seeds. They are covered with water and left overnight. The water is discarded. Place them in a pot with water to cover and boil. Pour out the water again and repeat the process. Pour out the water and weigh the fruit. Bring the fruit to a boil, adding the same weight of sugar as the fruit. Let it boil for about 45 minutes, stirring constantly, until caramelized.
