Description
This can be served with fish as an appetizer or with food as a salad. Although the list of ingredients is long, you just have to throw them all in a pot. So give it a try, it's a big hit at our table and I'm sure it will be in yours too.
Ingredients
1 chopped eggplant
1 chopped onion
1/2 chopped green bell pepper
1/2 chopped yellow bell pepper
1 can of mushrooms (100 grams), drained;
2 garlic cloves minced
1/3 cup olive oil
1/2 teaspoon oregano
1 and 1/2 teaspoons of sugar
1 can (170 grams) tomato paste
1/4 cup of water
2 tablespoons wine vinegar
1/2 cup sliced olives
3 tablespoons of pine nuts
Salt and pepper to taste
Directions
Put all the ingredients in a pot. Bring to a boil and let simmer, covered, for 1/2 hour. Stir frequently.
Let cool and refrigerate before serving.
Makes 12-16 servings
