Ingredients: For the flan ½ can evaporated milk ½ of a 12 fl oz can, 6 fl oz ½ can sweetened condensed milk, ½ of a 14 fl oz can, 7 fl oz 3 eggs 4 oz cream cheese cubes, ½ of an 8 oz package For the caramel ½ cup granulated sugar For the OAP 3 cups water Preparation: CARAMEL Caramelize the sugar: Heat the sugar in a pan over medium-high heat. Stir the sugar constantly. It will begin to clump together at first, and once it gets hot enough, it will begin to brown and melt into a caramel. Stir continuously until all the sugar has liquefied and no lumps remain in the pan. Don't leave the stovetop. Your caramel can go from perfect to burnt in no time! Pour the caramel into the flan mold: Once all the lumps have been removed, immediately pour the caramel into the flan mold. Leaving it on the stovetop any longer could cause the caramel to burn. When pouring the caramel into the flan mold, make sure it spreads evenly across the bottom of the entire mold. Coat the flan dish: Gently rotate the mold so that the caramel also covers the sides. The caramel is extremely hot and can cause severe burns if it spills on you, so always handle it very carefully. Continue swirling the caramel until it cools and hardens to the point where it no longer moves. Set the mold aside: Set the flan aside and let the caramel cool. : Prepare the FLAN MIX Blend the Blender Ingredients: Add the evaporated milk, cream cheese, condensed milk, and eggs to a blender. Blend on high speed until fully blended. Add to the Flan Mold: Pour the flan mix into the flan mold, over the caramel layer. Place and tighten the lid over the flan mold. If you don't have a covered flan mold like I do, use aluminum foil to cover your flan. Set the COOKING TIME 14-Minute Cook Time: Pour 3 cups of water into your Instant Pot. Use your rack and place the covered flan pan in the OAP. Cook on Manual High Pressure for 14 minutes. (The Manual button is labeled Pressure Cook on some models.) Full NPR: Once the 14-minute cooking time is complete, allow a full NPR (Natural Pressure Release). After the NPR is finished and the pin has dropped, open the OAP and carefully remove the flan tray. Place it on the counter to cool for 10 minutes before placing it in the refrigerator. Place it in the refrigerator for at least 3 hours. I know it's hard to wait, but don't skip this step. Letting the flan rest in the refrigerator overnight will give the best results. UNMOLDING AND SERVE Unmolding the Flan: After the flan has refrigerated for at least 3 hours (overnight is best), run a knife around the sides of the pan, separating the flan from the edges. Use a plate to carefully turn the flan upside down and expose the beautiful caramel-covered dessert. Serve and enjoy! |
