Preparation : Mix the cornstarch, flour, baking soda, and baking powder beat the sugar with the butter Add the cognac and the egg yolks and continue beating. Mix the two previous mixtures and add vanilla essence and the zest of 1 lemon. Stretch the dough on the table, adding cornstarch. Mold into medallions. Place in a medium oven until lightly browned.
