Chocolate-covered strawberry snacks

Ingredients

  • 4 large strawberries

  • 1/8 cup dark chocolate chips

  • 1/2 teaspoon olive oil or coconut oil


Preparation

  • Line a plate or cookie sheet with parchment paper. Cut off the stems and ends and discard them. Cut the strawberries into 3 discs and place them on the parchment paper, leaving space between each disc for the chocolate.

  • Use a double boiler to melt the chocolate. Place a small saucepan on the stovetop and add about 1 cup of water to the pan. Add a heatproof glass bowl on top of the pan so that it sits slightly inside the pan and the water, but doesn't touch the water—just the steam. If necessary, remove some water. Add the chocolate to the bowl and stir continuously while the water in the pan boils. Once the chocolate is melted, add the oil and remove from heat.

  • You can also melt the chocolate in your microwave. In a microwave-safe bowl, heat the chocolate chips in 10-second intervals, stirring between each 10-second interval until the chocolate is liquid.

  • Remove from microwave and add oil and stir well.

  • Drizzle the chocolate over the strawberries, place in the refrigerator for 20 minutes before serving.
