BLACK PRUNE CAKE

Ingredients :

  • 24 pitted prunes

  • 1 and 1/2 cups of boiling water

  • 150 grams of butter

  • 300 grams of sugar

  • 3 eggs

  • 2 teaspoons of vanilla essence

  • 400 g self-rising flour



Preparation :

  • Soak the plums in boiling water until tender, chop them, and reserve the water.

  • Beat the sugar with the butter.

  • Add the eggs one by one, beating each time.

  • Add the vanilla, the plums and alternate the plum water with the self-rising flour.

  • Pour into a greased and floured 18x30 cm (Pyrex) pan and bake in a preheated, moderate oven for 35 to 40 minutes.
