BEEF FRIED RICE INSTAPOT

INGREDIENTS :

  • 1 tablespoon of olive oil

  • 6-8 oz / 250 g of beef strips, Facon (imitation pancetta) or pastrami cut into 1/2 inch / 1.5 cm strips

  • 2 large eggs, beaten

  • 1 cup long grain brown rice

  • 1 tablespoon of soy sauce

  • 1 1/2 cups low-sodium chicken or vegetable broth

  • 8 oz/250 g frozen mixed vegetables,

Preparation 1 Set the pressure cooker to stir-fry mode. Add the oil and sauté the meat until crispy. Add the eggs and sauté, stirring constantly, until scrambled. 2 Remove the meat and eggs from the cooker and place them in a large bowl or saucepan. 3 Add the rice, soy sauce, and broth to the cooker. Lock the lid and close the pressure valve. 4 Cook for 14 minutes on manual high pressure. Naturally release the pressure for 20 minutes, then manually release the pressure. 5 Pour the rice into the bowl with the meat and eggs. Add the thawed mixed vegetables and stir to combine. Serve hot.
