BAKED ZUCCHINI FRITTATA

Ingredients

  • 6 eggs

  • 1 zucchini, thinly sliced, cut into 4 pieces

  • 1 yellow zucchini, thinly sliced and diced

  • 1/3 cup chopped red bell pepper

  • 1 cup shredded cheddar cheese

  • 6 each of grated Parmesan cheese

  • 1 cup cottage cheese, sour cream or ricotta

  • 1 Teaspoon of oregano or any seasoning you like

  • 1/2 teaspoon of pepper Preparation

  • Preheat oven to 375

  • Grease a 12-muffin tin or a Pyrex pan

  • In a medium bowl, whisk the eggs together. Add the remaining ingredients. Mix until smooth.

  • Fill the muffin tins or the chosen dish.

  • Place in the middle of the oven and cook for 30 minutes or until golden brown.

  • Serve alone or with salad. It also works as a side dish.
