6 eggs
1 zucchini, thinly sliced, cut into 4 pieces
1 yellow zucchini, thinly sliced and diced
1/3 cup chopped red bell pepper
1 cup shredded cheddar cheese
6 each of grated Parmesan cheese
1 cup cottage cheese, sour cream or ricotta
1 Teaspoon of oregano or any seasoning you like
1/2 teaspoon of pepper Preparation
Preheat oven to 375
Grease a 12-muffin tin or a Pyrex pan
In a medium bowl, whisk the eggs together. Add the remaining ingredients. Mix until smooth.
Fill the muffin tins or the chosen dish.
Place in the middle of the oven and cook for 30 minutes or until golden brown.
Serve alone or with salad. It also works as a side dish.
