BAKED SOLE WITH LEMON AND GRATED CHEESE

For 4 servings

Ingredients :


For the breadcrumb mixture:

  • ¾ cup good quality breadcrumbs

  • 1 teaspoon of lemon peel

  • ¼ cup walnut halves

  • ¼ cup grated Parmesan cheese

  • 2 tablespoons of olive oil

For the sole:

  • 4 sole fillets, washed and dried

  • Salt and freshly ground black pepper

  • 4 tablespoons of butter

  • ¼ cup lemon juice

  • 3 tablespoons of capers

Preparation:

  • Preheat the oven to 200ºC.

  • In a food processor, combine the breadcrumbs, lemon zest, walnuts, and cheese. Process until smooth. Continue processing while adding the olive oil. Set aside.

  • Season the fish with salt and pepper. Place 4 fillets in a single layer in a 9x12 inch baking dish.

  • In a small saucepan, melt 4 tablespoons of butter and add the lemon juice and capers.

  • Pour the butter mixture over the fish. Sprinkle the breadcrumb mixture over the top of the fish. Bake uncovered for 15 to 20 minutes.
