For the breadcrumb mixture: ¾ cup good quality breadcrumbs 1 teaspoon of lemon peel ¼ cup walnut halves ¼ cup grated Parmesan cheese 2 tablespoons of olive oil
For the sole: Preparation: Preheat the oven to 200ºC. In a food processor, combine the breadcrumbs, lemon zest, walnuts, and cheese. Process until smooth. Continue processing while adding the olive oil. Set aside. Season the fish with salt and pepper. Place 4 fillets in a single layer in a 9x12 inch baking dish. In a small saucepan, melt 4 tablespoons of butter and add the lemon juice and capers. Pour the butter mixture over the fish. Sprinkle the breadcrumb mixture over the top of the fish. Bake uncovered for 15 to 20 minutes.
