ARGENTINE POTATO SALAD

​Ingredients:

• 4 or 5 whole medium potatoes, unpeeled

• 1 large onion chopped

• 3 hard boiled eggs

• 4 heaping tablespoons mayonnaise

• 1 tsp mustard

• salt and pepper

Directions:

• wash the potatoes and put them in the bowl of the instapot 16 my ones in STEAM. (Or boil them whole until they are just tender).

• Let cool in the refrigerator for 2 hours. Peel them under cold water and cut them into medium cubes.

• Add the chopped onion and the eggs cut into pieces. Season with salt and pepper

• Season with mayonnaise and mustard. Mix well and refrigerate until serving.
