Ingredients : For the dough: 280 gr. butter or margarine 140 grams of sugar 2 tbsp of cream 2 egg yolks 2 tbsp of cold water 2 teaspoons of vanilla essence 240 grams of all-purpose flour 240 grams of self-rising flour (if you don't have any, you can use regular flour, but you'll need to add 2 teaspoons of baking powder)
For the filling:
Preparation : Place the melted butter and sugar in a bowl, mix, and add the cream, egg yolks, and cold water. Finally, flavor with vanilla essence. Very slowly, add the previously sifted flour with the baking powder in a drizzle until it is completely absorbed. Work with a wooden spatula. Let it rest covered with plastic wrap for 2 to 3 hours in the refrigerator. Place the chopped apples moistened with lemon in a bowl with the sugar and 1/2 cup of water, and cook until smooth. If you prefer, you can add cloves or cinnamon. You can also add raisins or shelled walnuts. In a tartlet, line the bottom with pastry, brush with peach or apricot jam, and add the apple filling. Cover again with pastry; if desired, you can make a frill and bake in the oven for 20 to 30 minutes. Remove and sprinkle with powdered sugar.
