INGREDIENTS 6 tablespoons extra virgin olive oil, divided 2 large Russet potatoes, sliced 1½ teaspoons of salt Freshly ground black pepper 1 leek, cleaned and chopped 10 ounces frozen chopped spinach, thawed and squeezed dry ¼ cup fresh basil, chopped 6 large eggs 1 1/4 cups almond milk or coconut milk 10 ounces cherry tomatoes, halved Fresh basil, for garnish
PREPARATION Preheat oven to 375°F. Grease a 9-inch pie plate with 2 tablespoons of EVOO. Place layers of sliced potatoes around the bottom of the pan and up the sides. Sprinkle with 1 teaspoon of salt and pepper. Brush with another 2 tablespoons of EVOO on top. Place the potato crust in the oven for 30 minutes or until golden brown, let cool. Meanwhile, heat a skillet over medium-high heat with 1 tablespoon of EVOO. Add the leeks and sauté until tender. Add the spinach and cook for another minute. Sprinkle with the remaining 1/2 teaspoon of salt and pepper to taste. Spread the leeks and spinach over the crust. Sprinkle fresh basil on top. In a large bowl, whisk together the eggs, coconut milk, salt, and pepper. Whisk for about 1 minute, then pour over the vegetables. Top with cherry tomato halves, cut side up. Drizzle with the remaining tablespoon of extra virgin olive oil and sprinkle with salt and pepper. Bake at 375°F for 40-50 minutes, or until the top has begun to brown and the quiche doesn't move when shaken. Remove from the oven and let cool for a few minutes before serving.
