SALMON WITH SESAME SEEDS AND SUMAC

Ingredients


  • ¾ cup sesame seeds

  • 2 tablespoons of Sumac

  • 1 teaspoon of salt

  • 4 salmon fillets (6 ounces)

  • Extra virgin olive oil, such as Colavita


Olive radish dressing

  • ⅓ cup chopped Kalamata olives

  • ⅓ cup finely chopped radishes

  • ⅓ cup chopped parsley

  • Extra virgin olive oil, such as Colavita

  • Juice and zest of one lemon

  • 1 teaspoon of honey



Preparation 1. Preheat oven to 425°F. 2. Combine sesame seeds, sumac, and salt in a shallow dish or bowl. 3. Brush oil over the salmon fillets and dip into the sesame sumac mixture. 4. Roast in a 425°F oven for 15 minutes. Remove from the oven and serve alongside the olive radish dressing. 5. Meanwhile, in a medium bowl, combine the olives, radish, parsley, extra virgin olive oil, lemon zest and juice, and honey. Mix well.

Tuna Variation 1. Drizzle the tuna steaks with the sesame mixture until completely coated. Heat the EVOO in a skillet over medium-high heat. 2. Place the sesame-crusted tuna steaks in the hot skillet and sear for two minutes. 3. Flip the tuna steaks and cook for two more minutes on the other side. Remove the tuna from the skillet and let it cool for 5 minutes. Slice thinly and serve with olives.
