Ingredients :
PREPARATION 1. Wash the rice in cold water, stirring the grains frequently, until the water runs clear. Drain the rice and let it dry for 15 minutes. 2. Whisk together the rice vinegar, sugar, and salt and set aside. 3. Cook the rice in the rice cooker as directed, or simmer the rice in 2 cups of cold water for 15 minutes, partially covered. Turn off the heat and let the rice sit for another 15 minutes. 4. Place the rice in a large skillet. Pour the vinegar mixture over the rice and, using a spatula or rice paddle, gently turn the rice over, trying not to break the grains—this is beautiful, tender rice! 5. Fan the rice with a lid to dry the rice and remove steam, which can turn the rice from al dente to mushy. 6. Once the rice has cooled slightly and absorbed the delicious vinegar mixture, transfer it to a bowl and keep warm. Any extra rice can be refrigerated and turned into amazing fried rice within 3 days. |
