Ingredients (for 3 servings) 1 small pumpkin (800 grams to 1 kilo), 1 heaped tablespoon of flour, 2 small eggs, 3 tablespoons of grated cheese (OPTIONAL), salt and nutmeg to taste.
Preparation To begin making this pumpkin pudding, we must peel and wash the vegetable, then cut it into slices and bake it on a baking sheet until tender. Remove the pumpkin from the oven and place it in a food processor along with the eggs , the tablespoon of flour, the grated cheese (OPTIONAL), salt, and nutmeg to taste. Blend for 2 minutes or until smooth, lump-free. In a baking dish lined with aluminum foil and lightly oiled, pour the mixture into the oven and bake at a moderate temperature for 30 to 40 minutes. We remove it and it is ready to consume.
