MANDARIN SPONGE

Ingredients

  • 500 grams of prepared or self-rising flour

  • 250 grams of sugar

  • 100 ml of neutral oil

  • 3 seedless mandarins

  • 3 eggs

  • 1 tablespoon baking powder

  • 1 tablespoon of vanilla essence.


Preparation

  • Wash the mandarins, put the eggs, sugar, oil, vanilla extract, and the mandarins, peeled and cut into quarters (to make blending easier), in the blender. Blend until smooth.

  • In a large bowl, sift the 500 grams of flour and the baking powder, pour in the blended mixture, and mix with a whisk.

  • Once well integrated and without lumps, we pour it into a floured and buttered baking pan and bake in a preheated oven at 180 degrees for approximately 30 minutes.

  • Before removing it, pierce the center with a toothpick; if it comes out dry, it's ready.

  • Let it cool, unmold and enjoy!!
