CUCUMBER AND SESAME SALAD

Ingredients
2 medium cucumbers
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon sugar
1 teaspoon grated fresh ginger
1 tablespoon toasted sesame seeds
½ teaspoon salt
How to make Cucumber and Sesame Salad, step by step
Wash the cucumbers and slice them thinly, preferably using a mandolin for even slices.
Place the slices in a bowl, sprinkle with salt, and let sit for 10 minutes. Then, rinse with cold water and drain well.
In a small bowl, mix the rice vinegar, soy sauce, sugar, and grated ginger until the sugar is completely dissolved.
Add the cucumber to the dressing and let it marinate for a few minutes.
Sprinkle with toasted sesame seeds and, if desired, add the cooked shrimp.
Serve cold, alone or as an accompaniment to sushi, fish or white meats.
