CREAMED SEMOLINA (cornemeal) GNOCCHI

INGREDIENTS: 1 l milk 1 tbsp butter 270 g Vittina 3 egg yolks 100 g grated cheese nutmeg salt and pepper heavy cream Procedure: Boil the milk with the butter. Drizzle the Vittina over the milk and stir over low heat for 1 minute. Remove from heat. Add 3 egg yolks, the grated cheese, and the nutmeg. Season with salt and pepper. Grease the marble baking sheet and roll out the dough. Cut medallions. Place in a greased dish. Cover with a knob of butter and heavy cream. Bake in a very hot oven. (Freezer: lasts three months) |
