BEETROOT RISOTTO

Ingredients :

  • 3 beets

  • CAROLINA DOUBLE RICE (one cup)

  • ONION (to taste)

  • SPRING ONION (to taste)

  • BUTTER (two tablespoons)

  • 1 BROTH



Preparation :

  • Bake 3 beets wrapped in aluminum foil for 1 hour. Once the beets are done, remove the foil and peel them.

  • Put 2 tablespoons of butter in a pan over the heat and let it melt. Once melted, add a chopped onion.

  • When the onion becomes translucent, add the chopped green onion. When the green onion becomes translucent, add the rice.

  • Puree the beets. Once the rice has turned a semi-transparent color, add the beet puree and plenty of (hot) water. Ensure everything is covered with the water.

  • Add a little broth, salt and pepper.

  • Cook until all the water is absorbed.
