Spinach shakshuka with cream and cheese

INGREDIENTS

  • 1 teaspoon of butter

  • ¼ cup chopped onion

  • 1 clove of minced garlic

  • 1 cup of spinach

  • ½ cup heavy cream

  • salt and pepper

  • 1 pinch of nutmeg (approx. ⅛ teaspoon)

  • 1 teaspoon of all-purpose flour

  • 2 eggs

  • ¼ cup grated mozzarella



Preparation

  1. Preheat oven to ROAST Heat a skillet over medium heat.

  2. Add the butter, onion, and garlic. Cook until the onions are golden brown, about 5 minutes.

  3. Add the spinach and let it cook until it wilts. Stir. Add the cream, salt, pepper, nutmeg, and flour. Stir until well blended.

  4. Let it simmer until the sauce thickens, about 5 minutes. Stir occasionally.

  5. Using a spatula, make some room to place the egg. Once the egg is snug in place, sprinkle on the mozzarella.

  6. Broil for 3 minutes for a soft yolk, or until the egg is cooked to your liking. If your pan isn't ovenproof, cover and cook over medium-low heat for 3 minutes for a soft yolk, or until the egg is cooked to your liking. Serve with fresh bread for dipping.
