Sauté a chopped onion in olive oil until translucent.
Add 200g of diced mushrooms. When they are tender, add 2 bunches of raw spinach (250g), cut into strips. Season with salt and pepper. Cook until the liquid evaporates.
Add two tablespoons of oats and mix.
Remove from heat. Add 3 tablespoons of thick cream cheese and mix.
Roll out the cake dough very thin, brush it all over with olive oil and sprinkle 2 tablespoons of oats.
Add the filling to one edge. Brush all edges with egg. Roll up, leaving the sides open and folded inward.
Place on a baking sheet lined with parchment paper, seal facing down. Brush with egg and sprinkle with sesame seeds.
Bake at 200 for 35 minutes
