Ingredients : 750 g of spaghetti oil 4 cloves of garlic 150 g pancetta 2 eggs 200 cc of cream 3/4 cup grated cheese
Preparation : Cook 750g of spaghetti until al dente, set aside in a warm place, lightly drizzled with oil. Put 50 g of butter with 2 tablespoons of oil in the pan and sauté 4 crushed garlic cloves. Add 150g of smoked bacon (without skin and bones) cut into julienne strips. While the bacon is browning, beat 2 eggs until foamy and mix them with the noodles. When the bacon is browned, pour this mixture over the noodles, add 1 small pot of cream and 3/4 cup of grated cheese. Mix everything over very low heat (taking care not to let it get too hot as this would curdle the egg sauce)
