SPAGHETTI CARBONARA

Ingredients :

  • 750 g of spaghetti

  • oil

  • 4 cloves of garlic

  • 150 g pancetta

  • 2 eggs

  • 200 cc of cream

  • 3/4 cup grated cheese



Preparation :

  • Cook 750g of spaghetti until al dente, set aside in a warm place, lightly drizzled with oil.

  • Put 50 g of butter with 2 tablespoons of oil in the pan and sauté 4 crushed garlic cloves.

  • Add 150g of smoked bacon (without skin and bones) cut into julienne strips.

  • While the bacon is browning, beat 2 eggs until foamy and mix them with the noodles.

  • When the bacon is browned, pour this mixture over the noodles, add 1 small pot of cream and 3/4 cup of grated cheese.

  • Mix everything over very low heat (taking care not to let it get too hot as this would curdle the egg sauce)
