Ingredients: 1 medium onion, peeled and quartered, stem end intact 1 pound new potatoes (about 12) 1 pound medium carrots, cut into 2 1⁄2-inch pieces 2 1/2 pounds of brisket, salt and black pepper 1 6-ounce can of tomato extract 1 cup of prepared black coffee 3 tablespoons Worcestershire sauce 1/4 cup brown sugar 2 tablespoons of chopped fresh parsley country bread (optional)
Preparation : In the bottom of a 5- to 6-quart casserole dish, combine the onion, potatoes, and carrots. Season the meat with 1 teaspoon of salt and ¼ teaspoon of pepper and place on top of the vegetables. In a small bowl, mix the tomato extract, coffee, Worcestershire sauce, and brown sugar; Pour over meat and vegetables. Cover and simmer until meat and vegetables are tender, 8 to 9 hours. Slice the meat against the grain and serve with the vegetables and sauce, sprinkled with parsley. Serve with bread, if desired.
