Slow Cooker Chicken Breast

Ingredients:

  • 1 medium onion, peeled and quartered, stem end intact

  • 1 pound new potatoes (about 12)

  • 1 pound medium carrots, cut into 2 1⁄2-inch pieces

  • 2 1/2 pounds of brisket,

  • salt and black pepper

  • 1 6-ounce can of tomato extract

  • 1 cup of prepared black coffee

  • 3 tablespoons Worcestershire sauce

  • 1/4 cup brown sugar

  • 2 tablespoons of chopped fresh parsley

  • country bread (optional)



Preparation :

  • In the bottom of a 5- to 6-quart casserole dish, combine the onion, potatoes, and carrots.

  • Season the meat with 1 teaspoon of salt and ¼ teaspoon of pepper and place on top of the vegetables.

  • In a small bowl, mix the tomato extract, coffee, Worcestershire sauce, and brown sugar;

  • Pour over meat and vegetables.

  • Cover and simmer until meat and vegetables are tender, 8 to 9 hours.

  • Slice the meat against the grain and serve with the vegetables and sauce, sprinkled with parsley.

  • Serve with bread, if desired.
