Milk Caramel Mousse

Ingredients : 6 eggs, 100g sugar, 6 bars of hot chocolate, 50g butter, 3 tbsp dulce de leche, 2 sachets of unflavored gelatin, 250g cream, 1 tsp vanilla EXTRACT Procedure: Separate the egg yolks and beat them with half of the sugar until foamy. Melt the chocolate with the butter and add the gelatin, previously hydrated with a little water, and stir until it comes to a boil. Let it cool and add it to the previous mixture. Add the dulce de leche and beat a little. Let it cool well. Whip the cream very thickly and add it to the previous mixture. Beat the egg whites with the remaining sugar until they are very stiff and add, mixing gently. Add the essence and mix again. Put it in the refrigerator.
