LEMON PIE

Ingredients :

  • 6 eggs

  • 1 lemon

  • 2 tbsp cornstarch

  • 1 glass of milk

  • 165 g of butter

  • 21 tbsp sugar

  • 3/4 cup all-purpose flour



Filling Preparation :

  • In a small jar, place three egg yolks with 3/4 cup of sugar, the juice and zest of 1 lemon, and 2 tablespoons of cornstarch.

  • Mix and add 1 glass of boiling milk and a pinch of butter.

  • Mix until thickened and put in the refrigerator.

Meringue:

  • Beat 6 egg whites until stiff.

  • Add 18 tablespoons of sugar. Beat and store in the refrigerator.

Cake:

  • Mix 150g of soft butter with 1 3/4 cups of flour.

  • Add 3 tablespoons of sugar and one yolk
