Ingredients : 1 1/2 cups all-purpose flour 1/2 tablespoon of baking soda 1/2 tbsp baking powder 1/2 teaspoon of salt 3 eggs 1 cup granulated sugar 2 tablespoons butter, softened 1 teaspoon vanilla extract 1 teaspoon lemon extract 1/3 cup lemon juice 1/2 cup vegetable oil
--- Lemon glaze --- 1 cup plus 1 tablespoon of powdered sugar 2 tablespoons of whole milk 1/2 tablespoon lemon extract
Preparation : Preheat oven to 350°. Combine flour, baking soda, baking powder, and salt in a large bowl. Use an electric mixer to mix the eggs, sugar, butter, vanilla, lemon extract, and lemon juice in a medium bowl. Pour the wet ingredients into the dry ingredients and mix until smooth. Add oil and mix well. Pour the ingredients into a well-greased 9x5-inch loaf pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Prepare the lemon glaze by combining the ingredients in a small bowl with an electric mixer on low speed. When the lemon pudding is cool, remove it from the pan and cover the top with the lemon glaze. When the glaze has set, cut the bread into eight 1-inch-thick slices.
