Lemon Cake with Starbucks Frosting 1

Ingredients :

  • 1 1/2 cups all-purpose flour

  • 1/2 tablespoon of baking soda

  • 1/2 tbsp baking powder

  • 1/2 teaspoon of salt

  • 3 eggs

  • 1 cup granulated sugar

  • 2 tablespoons butter, softened

  • 1 teaspoon vanilla extract

  • 1 teaspoon lemon extract

  • 1/3 cup lemon juice

  • 1/2 cup vegetable oil



--- Lemon glaze ---

  • 1 cup plus 1 tablespoon of powdered sugar

  • 2 tablespoons of whole milk

  • 1/2 tablespoon lemon extract



Preparation :

  • Preheat oven to 350°.

  • Combine flour, baking soda, baking powder, and salt in a large bowl.

  • Use an electric mixer to mix the eggs, sugar, butter, vanilla, lemon extract, and lemon juice in a medium bowl. Pour the wet ingredients into the dry ingredients and mix until smooth.

  • Add oil and mix well. Pour the ingredients into a well-greased 9x5-inch loaf pan. Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean. Prepare the lemon glaze by combining the ingredients in a small bowl with an electric mixer on low speed.

  • When the lemon pudding is cool, remove it from the pan and cover the top with the lemon glaze. When the glaze has set, cut the bread into eight 1-inch-thick slices.



Makes 8 slices.
