Gauchito Sauce

Ingredients :

  • 2 tbsp olive oil

  • 1 onion

  • 1 clove of garlic

  • 1 can of crushed tomatoes

  • several basil leaves

  • 1 tsp oregano

  • pepper

  • 1/2 cup of cream

  • Grated cheese


Preparation :

  • In 2 tablespoons of olive oil, sauté 1 chopped onion and 1 clove of garlic. Tip : to make the onion cook faster, add a pinch of baking soda (no more than that, otherwise it will have a strange taste) and salt.

  • When it is golden brown, I add 1 can of crushed tomatoes, or it can be canned tomatoes, crushed with a fork, with all the juice from the can as well, a few basil leaves, 1 teaspoon of oregano, and pepper.

  • We cook for about 10 minutes over low heat, then blend it or use a hand blender.

  • Now we add 125 cc of cream (1/2 cup) and let it cook for about 5 minutes,

  • as soon as it starts to boil again, we put it on low heat and it is ready to serve.

  • Add grated Parmesan cheese
