Beat the 10 egg whites until stiff.
Beat the 10 egg yolks with the sugar until stiff.
Melt the chocolate and butter in a double boiler.
Add the Nesquik to the yolks and continue beating.
Add half of the egg whites to the snow and fold in the other half.
Grease the springform pan and then line it with parchment paper.
Bake in a moderate oven for 1 hour and place a dish of water on the oven floor.
When you take it out of the oven and it is loose from the edge, place a kettle full of water in the center to flatten the center.
