INGREDIENTS 1 tablespoon of butter for a pan 1 (16 oz package) frozen chopped broccoli 8 large eggs 1/2 cup cream cheese (or full-fat Greek yogurt) 1 teaspoon coarse salt (not fine salt) 1/4 teaspoon black pepper 1 teaspoon garlic powder 1/4 cup chopped chives, white and green parts 1 cup shredded sharp cheddar cheese (4 oz)
Preparation Preheat oven to 400 degrees F. Generously grease a 9-inch pan. Place the broccoli in a large microwave-safe bowl. Add 1/4 cup of water. Cover and microwave on high for 6 minutes, stirring after the first 3 minutes. Drain well. In a large bowl, whisk together the eggs, cream cheese spread, salt, black pepper, and garlic powder. Add the broccoli, scallions, and cheese. Transfer the mixture to the prepared pan. Bake until golden brown and a knife inserted in the center comes out clean, about 30 minutes. Allow the quiche to cool and place on a wire rack, about 15 minutes, before cutting into 8 triangles and serving.
