Baked Salmon with Garlic and Sundried Tomatoes

Ingredients:

  • 1 Salmon

  • 12 cloves of garlic

  • 4 sun-dried tomatoes in oil

  • ½ cup fresh parsley

  • 2 teaspoons of salt

  • ½ cup olive oil

  • 4 cups cherry tomatoes, sliced

Preparation:

  • Place the salmon, skin-side down, on a large, low-sided baking sheet. Set aside.

  • Preheat the oven to 180ºC.

  • In a food processor, blend the garlic, tomatoes, and parsley, add salt and oil, and process until fully incorporated and a paste forms. Sprinkle the paste over the salmon.

  • To garnish, place sliced cherry tomatoes on top of the pasta. Cover and bake for 30 minutes. Serve warm or at room temperature.
